Sourdough Pancakes
Makes: 12-15 pancakes
Ingredients:
2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
¼ cup sugar
1 tsp salt
1 cup sourdough discard
1 large egg
1 1/4 cup buttermilk
1/4 cup melted butter
1-2 tsp vanilla (to taste)
1-2 tbsp butter for skillet
Instructions:
In a large bowl, combine flour, baking powder and baking soda, sugar, and salt. Whisk to combine.
Once dry ingredients are combined, add in sourdough starter, egg, buttermilk, butter, and vanilla. Whisk until combined.
Set batter aside and heat skillet to roughly 350 degrees. Grease skillet with the additional butter.
Use ¼ cup or ⅓ cup measuring cups to scoop batter and pour on griddle. You can add in blueberries, chocolate chips, or chopped nuts for extra flavor!
Allow pancake to cook for 1-2 minutes (or until there are bubbles on the top) then flip.
Cook for an additional 1-2 minutes until cooked through
Serve with homemade butter and warm maple syrup
Recipe Notes:
Buttermilk can be made by adding 1 tbsp vinegar or lemon juice to 1 cup regular milk
Using active starter will result in fluffier pancakes, but discard can also be used
Add or remove up to 1/4 cup of milk for a thinner or thicker batter
We love adding fruit, nuts, and/or chocolate chips when making these!
For maple cinnamon pancakes, replace the sugar, 1/4 cup milk, and vanilla with 1/4 cup pure maple syrup and add 1 tsp of cinnamon!
