Sourdough Chocolate Cake
Ingredients:
Cake:
1 ½ cups all-purpose flour
¾ cup cocoa powder
1 tsp salt
1 ½ tsp baking powder
1 tsp baking soda
2 large eggs
2 tsp vanilla extract
¾ cup melted butter
½ cup sourdough discard
1 cup granulated sugar
1 ¼ cup milk
Frosting:
1 cup softened butter
3 cups powdered sugar
1/2 cup cocoa
3 -4 tbsp heavy cream (or milk)
1 tsp vanilla
Pinch of salt
Instructions:
Cake:
Preheat oven to 350 degrees and lightly grease two 8 inch round cake pans.
Combine flour, cocoa powder, salt, baking powder, and baking soda in a medium size bowl. Set aside.
In a large bowl, combine eggs, vanilla, butter, sourdough discard, sugar, and milk
Add dry ingredients to the wet mixture and gently mix together. Only mix until combined, do not over mix!
Evenly split the batter between the two cake pans
Bake for 25-30 minutes until a toothpick comes out clean
Allow to cool before frosting!
Frosting:
Cream butter for 6-8 minutes until light and fluffy.
Add in powdered sugar and cocoa. (Be sure not to have your mixer on too high!) Mix until fully incorporated.
Add in vanilla.
Add heavy cream 1 tbsp at a time, whisking after each addition. Add salt to taste.
Whip frosting for an additional 4-5 minutes until fluffy and spreadable.
